Easy Keto Biscuits

Yield: Approximately 20 biscuits

 

Ingredients:

  • 1 cup finely chopped nuts (macadamias, almonds, or your preferred variety)
  • 1 cup almond flour
  • 120g butter, melted
  • 1/3 cup coconut flour
  • 1 tsp sweetener (stevia, monk fruit, or your preferred low-carb sweetener)
  • 1 tsp vanilla extract

 

Instructions:

  1. Preheat your oven to 180°C
  2. In a large mixing bowl, combine the finely chopped nuts, almond flour, melted butter, coconut flour, sweetener, and vanilla extract. Mix well until all the ingredients are evenly incorporated. You should have a slightly sticky dough-like consistency.
  3. Line a couple of baking trays with parchment paper or silicone baking mats. This will prevent the biscuits from sticking and make cleanup easier.
  4. Take small portions of the dough, about the size of a ping pong ball, and roll them into balls. Place the balls on the prepared baking trays, leaving enough space between each biscuit for them to spread slightly as they bake.
  5. Once all the dough has been rolled into balls and placed on the trays, gently flatten each ball with the palm of your hand or the back of a spoon. The biscuits should be around 6mm thick.
  6. Place the trays in the preheated oven and bake for 15 to 20 minutes, or until the biscuits turn a golden brown color. Keep a close eye on them during the last few minutes to prevent over-browning.
  7. Once baked, remove the trays from the oven and allow the biscuits to cool on the trays for a few minutes. This will help them firm up before transferring them to a wire rack to cool completely.
  8. Once cooled, these keto nut biscuits are ready to be enjoyed! Serve them as a snack with a cup of tea or coffee, or pack them into lunchboxes for a healthy treat.

 

Storing your keto biscuits

 

For storage, place the biscuits in an airtight container and store them at room temperature for up to one week. You can also freeze them for longer-term storage.
