Ingredients For Keto Cheese Biscotti Recipe

  • 200g almond flour
  • 100g shredded cheddar cheese (or your favourite cheese)
  • 40g grated parmesan cheese
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • ½ tsp dried herbs (like rosemary or thyme, optional)
  • 2 large eggs
  • 30g butter, melted
  • 1 pinch of salt
  • Freshly cracked black pepper, to taste

Method

Step 1: Preheat Your Oven

Preheat your oven to 160°C (fan-forced) or 180°C for conventional ovens. Line a baking tray with parchment paper to prevent sticking.

Step 2: Mix the Dry Ingredients

In a large bowl, combine:

  • Almond flour
  • Shredded cheddar cheese
  • Grated parmesan cheese
  • Baking powder
  • Garlic powder
  • Dried herbs (if using)
  • Salt
  • Black pepper

Mix until the ingredients are evenly distributed.

Step 3: Add the Wet Ingredients

  1. In a separate bowl, whisk the eggs lightly.
  2. Add the melted butter to the eggs.
  3. Pour the wet mixture into the dry ingredients and stir until a dough forms. Note: It’s normal for keto dough to feel slightly sticky.

Step 4: Shape the Dough

Transfer the dough onto the prepared baking tray. Shape it into a long, flat log, approximately 20 cm long and 7-8 cm wide. It should resemble a small loaf.

5: Bake the Biscotti

  1. Place the tray in the preheated oven.
  2. Bake for 20-25 minutes, or until the dough is golden and firm to the touch.
  3. Remove from the oven and let it cool for about 10 minutes.

6: Slice the Biscotti

  1. Once slightly cooled, use a sharp knife to slice the loaf into 1 cm thick biscotti pieces.
  2. Be gentle to avoid breaking the slices.

7: Second Bake (For Extra Crunch)

  1. Return the biscotti slices to the oven.
  2. Bake for an additional 10-15 minutes, flipping them halfway through.
  3. Continue baking until both sides are golden brown and crispy.

Lastly.. Step 8: Cool and Serve

Let the biscotti cool completely before serving, they will harden as they cool, achieving that perfect crunchy texture.
