Ingredients For Keto Cheese Biscotti Recipe
- 200g almond flour
- 100g shredded cheddar cheese (or your favourite cheese)
- 40g grated parmesan cheese
- 1 tsp baking powder
- 1 tsp garlic powder
- ½ tsp dried herbs (like rosemary or thyme, optional)
- 2 large eggs
- 30g butter, melted
- 1 pinch of salt
- Freshly cracked black pepper, to taste
Method
Step 1: Preheat Your Oven
Preheat your oven to 160°C (fan-forced) or 180°C for conventional ovens. Line a baking tray with parchment paper to prevent sticking.
Step 2: Mix the Dry Ingredients
In a large bowl, combine:
- Almond flour
- Shredded cheddar cheese
- Grated parmesan cheese
- Baking powder
- Garlic powder
- Dried herbs (if using)
- Salt
- Black pepper
Mix until the ingredients are evenly distributed.
Step 3: Add the Wet Ingredients
- In a separate bowl, whisk the eggs lightly.
- Add the melted butter to the eggs.
- Pour the wet mixture into the dry ingredients and stir until a dough forms. Note: It’s normal for keto dough to feel slightly sticky.
Step 4: Shape the Dough
Transfer the dough onto the prepared baking tray. Shape it into a long, flat log, approximately 20 cm long and 7-8 cm wide. It should resemble a small loaf.
5: Bake the Biscotti
- Place the tray in the preheated oven.
- Bake for 20-25 minutes, or until the dough is golden and firm to the touch.
- Remove from the oven and let it cool for about 10 minutes.
6: Slice the Biscotti
- Once slightly cooled, use a sharp knife to slice the loaf into 1 cm thick biscotti pieces.
- Be gentle to avoid breaking the slices.
7: Second Bake (For Extra Crunch)
- Return the biscotti slices to the oven.
- Bake for an additional 10-15 minutes, flipping them halfway through.
- Continue baking until both sides are golden brown and crispy.
Lastly.. Step 8: Cool and Serve
Let the biscotti cool completely before serving, they will harden as they cool, achieving that perfect crunchy texture.
