Keto rumballs are an easy no-bake treat that are always a crowd favourite, but the usual recipe includes a lot of high carb ingredients and sugar that can throw you off your keto diet. There’s no reason for you to miss out this Christmas, because this recipe will keep you on track with your diet by replacing the usual ingredients with low-carb alternatives like almond meal and coconut oil, but don’t worry we keep the rum.

 

Who Invented Rumballs?

 

No wonder I enjoy rumballs so much, like myself they are originally Danish! The original recipe for rum balls, also known as “Romkugler” , began when the bakers would find themselves with a left over abundance of cakes, pastries and treats at the end of the day that would not be fresh enough to sell the day after. So at the end of their shift, they decided to mix all the left-overs they had together and add cocoa and rum. The sticky dough was then rolled in shredded coconut or chocolate sprinkles and sold for a low price the next day, which quickly became a crowd favourite.

 

 

Should You Use Rum Essence or Real Rum In Your Keto Rum Balls?

 

Real rum of course, don’t be ridiculous. 

Whatever rum you’ve got left over in the bar will work. If you’re looking to make a few batches it’s best to use a sweet rum like gold rum or dark rum, I use whatever is on sale. The recipe recommends 1-2 tbsp but feel free to add more or less to your own taste preference.

Keto Rumballs Recipe

 

Prep-Time 15 minutes.

 

Ingredients
  • 2 tbsp cocoa or cacao powder, unsweetened
  • 2 tbsp coconut oil, melted
  • 1 tbsp monk fruit sweetener or sugar free maple syrup
  • 2 tbsp almond meal
  • 1 tsp Himalayan Sea Salt
  • 6 tbsp desiccated coconut + 1 tbsp for rolling
  • 1-2 tbsp rum (see note above)

 

Instructions
  1. Add all the dry ingredients into a bowl and mix everything together
  2. Add in the rum and melted coconut oil
  3. Using your hands, roll out 8 balls and then roll them in desiccated coconut
  4. Place onto a plate and put in the fridge until firm.
