Mediterranean keto diet – Greek Salad with Grilled Chicken

Ingredients:
Grilled Chicken:
- 2 boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 2 cloves garlic, minced

Salad:
- 4 cups mixed salad greens
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted

Dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
Marinate the Chicken:
- In a bowl, combine olive oil, minced garlic, dried oregano, salt, and pepper.
- Add the chicken to the marinade, making sure the pieces are well coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld.
Preheat the hotplate:
- Preheat your pan or bbq to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.
Grill the Chicken:
- Remove the chicken from the marinade and shake off any excess.
- Place the chicken pieces on the preheated grill and cook for 6-8 minutes per side, or until they are cooked through and have beautiful grill marks.
- Once cooked, remove the chicken and let it rest for a few minutes before slicing it into strips.
Prepare the Salad:
- In a large salad bowl, combine the mixed greens, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and Kalamata olives.
- Toss the salad ingredients gently to combine.
Make the Dressing:
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
Assemble the Salad:
